Chai French Toast Muffins

Breakfast is the perfect time to experiment with tasty protein recipes. Try these delicious chai french toast muffins made with Purely Inspired® Organic Protein 100% Plant-Based Nutritional Shake!
- 3 eggs, beaten
- 2 tbsp. ground flaxseed
- 2 tsp. cinnamon
- 1 tbsp. sugar
- 1 scoop Purely Inspired® Organic Protein, French Vanilla
- 2 tsp. vanilla extract
- 1/2 cup milk of choice
- 1/2 cup chai tea concentrate (or very strong chai tea)
- 9 slices whole wheat bread, cubed
Mix all ingredients together except for bread and stir well. Mix in bread cubes until all are coated. Let sit overnight (or at least for 5 minutes). Bake in the oven at 350°F until no liquid remains and top of muffins are crisp.
